Part Introduction:The cube roll is taken from the rib section of the cow, near the 6th to 12th ribs. It is the central part of the beef rib meat. Because its cross-section shows a shape similar to an eye, and there is a circle of slightly round fat in the center of the meat, which looks like the pupil of an eye, it is named beef ribeye cap.
