Part Introduction: Beef honeycomb tripe is the omasum of a cow, also known as the manyplies or psalterium. It is located in the cow's abdominal cavity, after the rumen and reticulum and before the abomasum. It is leaf - shaped in appearance and consists of many thin and tough folds, like a Venetian blind, hence the name "honeycomb tripe".
